Healthy Alfredo Sauce over Quinoa Spaghetti with Wild Scallops
Healthy Alfredo Sauce over Quinoa -Brown Rice pasta with Wild Scallops
Alfredo Sauce-
In a large sauce pan add :
- 1 yellow onion – diced
- 1 1/2 c unsweetened almond milk
- Drizzle olive oil
- 1 bag of Organic Riced Cauliflower
- 3 Garlic cloves diced
- Turn heat to medium
Stir with spoon, and add
- Juice from 1 1/2 Lemons
- 3 dashes of All Purpose Seasoning
- 4 twists of Himalayan Sea Salt Grinder
- 4 twists of Peppercorn Grinder
- 1/2 c Pre-Soaked Raw Cashews in water ** (let cashews soak in hot water for 30 min, then add)
- 1 TB Fresh Rosemary -chopped or dried
- 1 tsp Fresh Thyme or dried
- 1 leaf of Fresh Sage – chopped or 1/2 tsp dried
- 2 Leaves of Fresh Basil-chopped or 1 tsp dried
- Dash of Turmeric
- Dash of Organic Garlic Powder
- 1/3c Reduced Fat Organic Coconut Milk
- 1/2 Shallot chopped
Stir with spoon,
- When the sauce begins to boil turn heat down to low
- Begin scooping mixture into blender (I love to use my Ninja Blender ! See link)
- Blend on medium
- Then return back to pot until ready to serve
Quinoa Pasta ( follow directions on package )-
Wild Scallops-
- In a large sauté pan add
- 1/2c unsweetened Original Almond Milk
- Drizzle Oganic Olive Oil
- 1/2 Shallot -diced
- 2 Organic Garlic cloves diced
Turn heat to high
When the liquid beings to boil, add Scallops
- Drizzle Olive oil
- *Squeeze 1/2 Lemon juice
- 2 twists of Himalayan Sea Salt
- 2 twists of Peppercorn Grinder
- 1 TB chopped Rosemary
- 1 tsp of Fresh Thyme
- Dash of All purpose Seasoning
- Dash of Garlic Powder
- Dash of Cayenne ( optional)
Carefully Turn Scallops on to their opposite side, repeat steps from *
Turn heat down to medium
- Add 1 c Frozen or Fresh Organic Broccoli
- Add 1/2 Organic Red Bell Pepper -chopped
Mix with spoon so broccoli and red pepper are covered with the sauce liquid
Cover with lid
Cook for approximately 2-3 min or until desired texture is reached. Cut into a scallop to make sure it is NOT raw inside. If it is then cook for another 1-2 min and recheck.
Turn heat down to low until ready to serve
- On a clean plate , add :
- 1) Pasta
- 2) Alfredo Sauce
- 3) Scallops
- Enjoy
