Organic Zucchini, Beet, Sweet Potato chips with Organic Tomato Basil dipping sauce
I love creating Healthy versions of typically “unhealthy” snacks. The Organic Zucchini, Beet, and Sweet Potato Chips with Organic Tomato Basil dipping sauce is a perfect alternative to feel good about with out sacrificing flavor! The colors are also Bright and Vibrant, so you or your guests will love the appearance!

Instructions
  1. Pre heat oven to 400 degrees
  2. Line a cookie sheet with parchment paper
  3. Spray the parchment paper with Non Stick Organic Olive Oil spray
  4. Slice 1 Organic Zucchini into “chips” approximately  1/4″ in thick 
  5. Slice 1 Organic Large Beet into “chips” approximately 1/4″ in thick
  6. Slice 1 Organic Sweet Potato into “chips” approximately 1/4″ in thick
  7. In a separate bowl whisk 1 egg
  8. On a Separate plate add 
  9. 1 cup of Blanched Almond flour
  10. 1/2 cup of Organic Coconut flour
  11. 2 dashes of Organic Garlic powder
  12. 3 twists of Himalayan sea salt grinder
  13. 3 twists of Peppercorn grinder
  14. 1 dash Turmeric 
  15. 1 tsp Organic Red Pepper flakes (Optional)
  16. 2 dashes of Organic All purpose seasoning
  17. 1 tsp Organic Fresh Rosemary
  18. 1 tsp Organic Fresh Thyme
  19. 1 tsp Organic Fresh Parsley
  20. 1 tsp Organic Fresh Basil
  21. Mix with spoon
  22. Take each “chip”
  23. Dip into the egg then 
  24. Then Dip the “chip” into the flour mixture covering both sides
  25. Place Egg/ Flour covered “chips” onto parchment paper
  26. Repeat for all “chips”
  27. Bake for 15 min, flip, then bake for 5 min
  28. if not crispy cook for another 5-10 min
  29. When ready let cool on wire rack
  30. Organic Tomato Basil dipping sauce 
  31. One jar of organic tomato basil sauce – I used “Premium Organic Paesana” 
  32. But any another Organic brand will do – I also like the brand Mia’s 
  33. Heat sauce on high 
  34. Add :
  35. 5 Organic Cherry or Organic Grape Tomatoes
  36. 3 sliced Organic Mushrooms 
  37. 1/3 Organic Zucchini diced or sliced thin 
  38. 1 diced Garlic Clove
  39. 1/2 Shallot- diced 
  40. 2 dashes of all purpose seasoning 
  41. 2 twists Himalayan sea salt 
  42. 2 twists Peppercorn Grinder
  43. 1 dash of Organic Red Pepper Flakes 
  44. 1 tsp of Organic Basil 
  45. 1 tsp of Organic Thyme 
  46. 1 tsp Organic Parsley 
  47. Bring to boil then turn down to low and cover until ready to serve
