Cilantro, Coconut, & Lime Wild Shrimp over Coconut Confetti Cauliflower Rice
One of my Favorite Dishes! Wild Shrimp are Light and Simple, and Cauliflower Rice can be converted into virtually any rice recipe. The Cauliflower Rice Works well with the Coconut Milk, light, creamy, and almost airy texture. Its like a party of flavors and colors, which is my reasoning behind naming it “Coconut Confetti” Cauliflower Rice! It’s Just Delicious! Enjoy!

Ingredients
Instructions
  1. Use Fresh or Thawed Frozen Wild Shrimp to cook with. 
  2. For Large Shrimp Estimate 4-5 Shrimp per person
  3. For Medium- Small Shrimp Estimate 6-8 Shrimp per person
  4. Make sure the Shrimp are Cleaned and there are no tails or shells left on the Shrimp
  5. In a large Skillet, Add
  6. 1 Organic Garlic Clove Chopped
  7. 1/2 Shallot Chopped
  8. 1/3 c Reduced Fat Organic Coconut Milk
  9. Drizzle Olive Oil
  10. Turn heat to high
  11. Once the Coconut Milk begins to Boil add Shrimp and
  12. Juice from 1 lime
  13. 3 Twists of Himalayan Sea Salt*
  14. 3 Twists of Peppercorn Grinder
  15. 2 Dashes of Organic Garlic Powder
  16. 1 Dash of Turmeric
  17. 1 Tsp of Fresh Cilantro
  18. 2 Dashes of Organic All Purpose Seasoning
  19. 1 Dash of Cayenne Pepper 
  20. When The Shrimp begins to turn Pink( the Coconut milk side down)
  21. Carefully Turn Each Shrimp onto its opposite side
  22. Repeat Steps from *
  23. Turn Heat down to Medium until Shrimp is Pink and fully cooked on both sides
  24. Turn Heat down to Low until ready to serve
  25. Coconut Confetti Cauliflower Rice
  26. Add 1 package of Organic Riced Cauliflower into a medium size pot 
  27. Drizzle olive oil
  28. 1 Organic Garlic Clove- diced
  29. 1/2 Shallot- diced
  30. Add 1/3 can of Organic Reduced Fat Coconut Milk
  31. Juice from 1 lime
  32. Turn Heat to Medium, Add
  33. 1/2 c Organic Peas Fresh or Frozen
  34. 1/2 c Organic Corn Fresh or Frozen
  35. 1/4 c Chopped Organic Purple Cabbage 
  36. Stir with Spoon, then Add
  37. 1/4 c Organic Shredded Unsweetened Coconut
  38. 1 handful of Fresh Organic Cilantro -Chopped
  39.  1 handful of Fresh Organic Parsley -Chopped
  40. 1/2 tsp of Organic Red Pepper Flakes
  41. 1 Dash of Turmeric
  42. 1 Dash of Taco Seasoning
  43. 1 Dash of Organic All Purpose Seasoning
  44. 1 Dash of Organic Garlic Powder
  45. 3 Twists of Himalayan Sea Salt Grinder
  46. 3 Twists of Peppercorn Grinder
  47. Stir and cook until Liquid begins to boil , then lower heat to low for 5-10 min, cover with lid, stir in between,  until desired ” rice ” texture is achieved
