Healthy Chocolate Fudge Easter Eggs
OMG these are absolutely amazing!! I literally ate 4. The recipe makes 12 lol!!!
I wanted to make a healthy treat that can be enjoyed by all minus the guilt of feeling like garbage after eating a ton of store-bought "eggs" filled with fillers, preservatives, partially hydrogenated oils , etc etc etc etc. Therefore I created these delicious little treats that can be enjoyed at anytime of year! Instead of Rolling into an egg shape, Roll into a ball, or heart, or whatever shape you desire!
Instructions
in a large mixing bowl add
1/4 c of Unsweetened Almond Milk
2 packets or 2 scoops of Dutch Chocolate Complete
1/3 c Organic Coconut Flour
1/3 c Organic Cacao powder
4 tablespoons of Raw Maple Syrup
3 heaping tablespoons of Raw Almond Butter
1 additional splash of Unsweetened Almond Milk
3 twists of Himalayan Sea Salt
Mix completely with Spoon until all ingredients are combined and smooth
Line a large pyrex dish with parchment paper and set aside
With a Spoon or your hands ( I used my hands) Roll mixture into little eggs about 1 1/2 inches in length / 1 inch wide
The recipe should yield approximately 12 eggs+
put completed eggs on lined pyrex dish, cover and put in refrigerator while making chocolate shell
-
in a small sauce pan, add
1 Hu Simple Dark Chocolate bar (broken into pieces)
3 tablespoons of raw maple syrup
-
-
When completely melted remove from heat
-
Take refrigerated eggs out of the fridge and one by one spoon out the hot chocolate and pat onto the egg. Only cover the top half of the egg. Be careful because the chocolate will be hot
Place Completed eggs back onto the lined pyrex dish
-
add 1/2 c unsweetened shredded coconut onto a plate
roll the completed eggs in the coconut so it is completely covered
You can also roll the eggs into a 1 tablespoon of Dragon Fruit powder; Matcha Powder; and or Beet Powder
