Cilantro, Coconut, & Lime Shrimp over Confetti Coconut Cauliflower Rice
One of my Favorite Dishes! Wild Shrimp are Light and Simple, and Cauliflower Rice can be converted into virtually any rice recipe. The Cauliflower Rice Works well with the Coconut Milk, light, creamy, and almost airy texture. Its like a party of flavors and colors, which is my reasoning behind naming it "Coconut Confetti" Cauliflower Rice! It's Just Delicious! Enjoy!

Ingredients
- 4-5 Large Shrimp per person
- 6-8 Medium- Small Shrimp per person
- 2 clove Organic Garlic Clove Chopped- separated 1for shrimp and 1for rice
- 1 shallot chopped separated 1/2 shallot for shrimp and 1/2 shallot for rice
- 1 Can of Reduced Fat Organic Coconut Milk separated into 1/2c for shrimp and 1/3c for rice
- 2 tsp Drizzles Olive Oil or 1for Shrimp and 1for rice
- 2 limes 1 lime's juice for shrimp 1 lime's juice for rice
- 9 Twists Himalayan Sea Salt (3 twists per side of shrimp, twists for rice)
- 9 Twists Peppercorn grinder (3 twists per side of shrimp,3 twists for rice)
- 2 Dashes Organic Garlic Powder (2 Dashes per side of shrimp,1 dash for rice)
- 1 Dash Turmeric (1 Dash per side of shrimp dash for rice)
- 1 tsp Fresh Cilantro -for shrimp
- 1 Handful Organic Fresh Cilantro - for rice
- 1 Handful Organic Fresh Parsley- for rice
- 5 Dashes Organic All Purpose seasoning (2 Dashes per side of shrimp, 1 dash for rice)
- 1 Dash Cayenne Pepper
- 1/2 c Organic Peas Fresh or Frozen
- 1/2 c Organic Corn Fresh or Frozen
- 1/4 c Chopped Organic Purple Cabbage
- 1/4 c Organic Shredded Unsweetened Coconut
- 1/2 tsp Organic Red Pepper Flakes
- 1 Dash Taco Seasoning

Instructions
- Use Fresh or Thawed Frozen Wild Shrimp to cook with.
- For Large Shrimp Estimate 4-5 Shrimp per person
- For Medium- Small Shrimp Estimate 6-8 Shrimp per person
- Make sure the Shrimp are Cleaned and there are no tails or shells left on the Shrimp
- In a large Skillet, Add
- 1 Organic Garlic Clove Chopped
- 1/2 Shallot Chopped
- 1/3 c Reduced Fat Organic Coconut Milk
- Drizzle Olive Oil
- Turn heat to high
- Once the Coconut Milk begins to Boil add Shrimp and
- Juice from 1 lime
- 3 Twists of Himalayan Sea Salt*
- 3 Twists of Peppercorn Grinder
- 2 Dashes of Organic Garlic Powder
- 1 Dash of Turmeric
- 1 Tsp of Fresh Cilantro
- 2 Dashes of Organic All Purpose Seasoning
- 1 Dash of Cayenne Pepper
- When The Shrimp begins to turn Pink( the Coconut milk side down)
- Carefully Turn Each Shrimp onto its opposite side
- Repeat Steps from *
- Turn Heat down to Medium until Shrimp is Pink and fully cooked on both sides
- Turn Heat down to Low until ready to serve
- Coconut Confetti Cauliflower Rice
- Add 1 package of Organic Riced Cauliflower into a medium size pot
- Drizzle olive oil
- 1 Organic Garlic Clove- diced
- 1/2 Shallot- diced
- Add 1/3 can of Organic Reduced Fat Coconut Milk
- Juice from 1 lime
- Turn Heat to Medium, Add
- 1/2 c Organic Peas Fresh or Frozen
- 1/2 c Organic Corn Fresh or Frozen
- 1/4 c Chopped Organic Purple Cabbage
- Stir with Spoon, then Add
- 1/4 c Organic Shredded Unsweetened Coconut
- 1 handful of Fresh Organic Cilantro -Chopped
- 1 handful of Fresh Organic Parsley -Chopped
- 1/2 tsp of Organic Red Pepper Flakes
- 1 Dash of Turmeric
- 1 Dash of Taco Seasoning
- 1 Dash of Organic All Purpose Seasoning
- 1 Dash of Organic Garlic Powder
- 3 Twists of Himalayan Sea Salt Grinder
- 3 Twists of Peppercorn Grinder
- Stir and cook until Liquid begins to boil , then lower heat to low for 5-10 min, cover with lid, stir in between, until desired " rice " texture is achieved
